This coffee’s story begins on Finca El Paraíso 92, a family-run farm led by the renowned producer, Wilton Benitez. With decades of dedication to exotic coffee cultivation, his team brings together tradition and cutting-edge innovation to craft an extraordinary cup.

Each bean of Sudan Rume undergoes a double anaerobic fermentation and thermoshock process, a unique method that results in an extraordinary flavor profile. Here’s how it’s done:

Manual Harvesting – The cherries are hand-picked at peak ripeness to ensure only the finest quality.
Selection by Size and Density – Cherries are carefully sorted to ensure uniformity in the batch.
Sterilization – Cherries are sterilized with ozonated water and ultraviolet light for impeccable cleanliness.
Thermal Shock – The cherries are immersed in water at 90°C for 120 seconds to enhance flavor development.
Pulping – The cherries are pulped to separate the fruit from the beans.
First Anaerobic Fermentation – Beans are placed in anaerobic bioreactors, and fermentation is initiated using Saccharomyces pastorianus yeast.
pH and Sugar Adjustment – Citric acid, bicarbonate, or honey from previous batches is used to adjust the pH and sugar levels for precise control.
Second Anaerobic Fermentation – Fermentation continues for a total of 96 hours, creating a complex flavor profile.
Sealing the Beans – Beans are subjected to alternating hot and cold water treatments to lock in flavors.
Drying – The beans are carefully dried at 38°C, preserving their delicate characteristics.
The result is a coffee like no other, with vibrant notes of bergamot tea, a bouquet of floral aromas, an array of stone fruits, maple syrup, and berries.
